As promised, I am going to share the other half of Kyle's family meal. He decided he wanted to try and make his own version of egg potato salad. While at the store he picked out petite yellow potatoes.
I helped him prepare the potatoes. He was a little unsure about peeling the potatoes, so I peeled them and then he cubed them into small pieces. He boiled the potatoes on the stove for 20-30 minutes.
In a bowl he mixed the cooked potatoes, several large spoonfuls of mayo with olive oil, 5 hard boiled eggs, a little bit of mustard, some sliced green onion. He also sprinkled in some salt, pepper and paprika.
After mixing, he added one last sliced egg for decoration. He also sprinkled on a little more paprika for color.
Kyle's potato salad was a perfect side dish with the Cheesy BBQ Sliders that he made for us.
That's how I like my potato salad! Simple ingredients! I've never thought to sprinkle with paprika! Great tip Kyle!!

DeleteMy youngest loves deviled egg potato salad and this is very similar been trying to find a recipe will have to make this recipe love it and I also have a kyle my older son they both love to cook thanks for sharing at freedom fridays
