This is actually the second time we made this recipe this week. I was originally going to post this recipe a couple of days ago, but something happened.....
I was originally going to share this full size loaf with powdered sugar glaze. It looked amazing. Kyle kept asking nicely bugging me when could he have a slice. I told him he would have to wait until I took the bread out of the pan and took a few more pictures. Because I wanted the asking to stop I tried to take it out of the pan before it was cool enough, and it kind of fell apart. I probably should have baked it a few extra minutes, because the inside was too soft. I chilled it in the refrigerator, but it just did not look good enough for pictures. It did, however, taste good enough to eat. Almost the entire loaf disappeared into my son's belly.
Kyle loved the bread so much, he offered to help me make it again today. so I could take some more pictures. He also knew that meant he could eat some more of it. Here he is following the recipe.
We used the same basic recipe as the Chocolate Strawberry Muffins, that you can see here, we just changed the filler ingredients. Kyle mixed together the dry ingredients first, and then added in the wet ingredients. Instead of adding chocolate chips like he did with the muffins, he added one banana, and about 1 1/2 to 2 cups strawberries.

After mixing well, Kyle scooped the batter evenly into a mini loaf pan. I like to make mini loaves, because then I know each of my kids will get about the same amount. They won't complain they did not get any, because their brother ate it all. We also went with the mini loaf pan, because the full loaf pan was in the dishwasher.
A full loaf of Strawberry bread bakes at 350 degrees for 55-60 minutes. Bread in a mini loaf pan takes about 30 minutes. I did not add powdered sugar glaze this time, but it is very easy to make. Just add a couple of tablespoons of milk to powdered sugar until it is the consistency that you like.
Now I better go get my share of this bread before it all disappears!

ReplyDeleteMan...I thought you had me last time with the strawberry muffins (which I pinned), but this one is stealing the show!!! I can't wait to try this out. My whole family loves banana bread, carrot bread, etc, so this bread will be another to add to the list. =0)
