Kyle's back! If you have been following my blog for a couple of years you may know that my son who loves to cook, has been sharing kid friendly recipes. During this past school year, he wanted to take a break. Now that summer is here, you should see him on the blog more often. I asked Kyle if he would like to try a strawberry recipe for strawberry week, and he choose Chocolate Strawberry Muffins.
He used the basic banana bread recipe we have used for year, and then adapted it for his muffins.
In a mixing bowl mix the following dry ingredients
1 3/4 cup flour
2/3 cup sugar
2 tsp. baking powder
1/2 tsp baking soda
1.4 tsp salt
He then added the wet ingredients to the bowl
cut strawberries (I was cutting them while he was putting together the rest of the ingredients. I have to admit, I did not measure how much I cut, but I gave him a lot)
1/2 cup mini chocolate chips
1/2 c softened butter or margarine
2 eggs
2 Tbsp milk
Mix all of the ingredients together well, either by hand or with a standing mixer. (We added a lot of strawberries and chocolate to our muffins. You do not need to add that many if you prefer less. This recipe is easily adaptable)
Bake in a 350 degree preheated oven for 20-25 minutes.
When the muffins first came out of the oven, they appeared a little darker than Kyle thought they would. I explained to him that the darker color was from the chocolate he had added. He decided to give one a try, and has he was inhaling it, said.. "These are delicious!" He loved them so much he ate three, and wanted a fourth in less than 10 minutes.
The muffin plate as soon as the photo shoot was done. I am sure he will be making these muffins again.
Two of my kids love to cook too so I will have to share Kyle's recipes with them.
