Cheesy Apple Quesadillas is quick and easy to make and is good to serve for lunch, parties or just a snack. It can also be made with chicken or without. Today we chose to have the vegetarian version. We used flour tortillas, red pepper jelly, apples and sharp cheddar cheese.
Pepper Jelly can be made from either red or green peppers. The green pepper jelly is more mild and sweet. This week our local store only had red pepper jelly. It is also sweet but also a tad spicy and gave the quesadillas a bit of a kick. Start by spreading pepper jelly on the torillla, and then a layer or sliced apples on top of that.
Layer on some sharp cheddar cheese. It could be sliced or shredded. I doesn't matter because it is just going to melt anyway.
Fold the tortillas in half and lay them on a cookie sheet that has been sprayed with cooking spray. Put them in a 400 degree oven for 10 minutes. At the 5 minute mark, turn the quesadillas over so both sides evenly bake.
As usual, I overstuffed the tortilla a little bit so some of the cheese come out of the sides. I love cheese though, and in my opinion you can never have too much cheese.
Slice each of the tortillas into triangles, and enjoy!
Act quickly because they may disappear fast. This is my teenage daughter taking some as I was taking pictures of the finished quesadillas.
