Leprechaun Marshmallow Pops

Since I have a bit of a hectic schedule this week, I thought it would be fun to reshare an oldie, but goodie.  I really love my little leprechaun pops, and I know they are new to many of my new followers.

In 2011, I had an idea.  I came up with this cute and simple leprechaun pop.  While I really liked him, I felt he needed something.

So in 2012, I decided to give him a bit of an update.  I melted some green Wilton candies  in the microwave using the 30 second method.

I allowed the candy on body marshmallow to harden, and then I added a marshmallow on its side for the head. Make sure that there is enough hardened candy on the bottom of the marshmallow, or they might slide out of place.  A great way to do this is inserting the lollipop sticks into a piece of styrofoam that will hold it in place.

I coated mini marshmallows in the candy melts to make the leprechaun hats.  I then allowed them the harden resting on toothpicks.

I drew on the faces using edible markers

I then used Wilton orange decorating icing with the "hair tip" to add the hair.  The special tip made the icing come out in a curly motion. It worked really well for the first 6-8 pops, but as the tube ran low, it became harder to use.   If needed, you can warm up the icing in the microwave for a few seconds to keep it from clogging in the tip.   I added the mini marshmallow hats to his head, immediately after adding the hair.  I then outlined them with a tube of green gel to make a hat rim.

A great way to display the Leprechaun pops is in a homemade pot of gold.
