I had a coupon last week for a $1 off Green Giant Klondike mini potatoes. I noticed a kind of potato that I had never seen before, purple potatoes! I decided to give them a try, and make something new for my family. I followed the directions on the bag and boiled them in a small amount of water for about 20-30 minutes. They turned out perfectly. I thought they might just have purple skins and we were all a bit surprised by the vivid color on all the inside.
One of my children was a bit cautious, but once they were assured it tastes just like a regular potato there were brave enough to eat it.
With a little bit of butter and shredded cheese, delish! Now that I know about purple potatoes, I thinking of so fun possibilities to use them.
