I still have some strawberries from our berry picking trip a few days ago, and I wanted to use them in a fun and simple recipe. I decided to make a strawberry pie. I found a recipe that I liked on Food.com, but then I made my own changes. The results were DELICIOUS! This pie was such a HUGE hit with everyone that I have been asked to make it again on Monday for the real 4th of July.
For this recipe you will need strawberries, blueberries, a graham cracker crust (I used chocolate), 1 box strawberry jello, cornstarch, water and cool whip.
For the first step you are going to boil 1 cup sugar, 1 1/4 cups water, and 2 Tablespoons of cornstarch over medium heat. Stir frequently, as is starts to boil and begins to thicken.
Add 1/4 cup strawberry jello powder. It will become this pretty red color. Stir until all the powder is dissolved, and then remove from heat. Once it is cooled a bit, put it in the refrigerator and chill 1-2 hours.
While cooling our glaze, halve 4 cups of strawberries. I placed it in the crust first in this picture, but the next time I make it I will mix the berries and glaze BEFORE putting them in the crust.
Mix the glaze with the berries and place in the graham cracker crust. Chill again for 2 more hours
Now we need to add our white and blue to our red strawberries
Add a layer of cool whip on top of the strawberries.
Place blueberries however you prefer on top of the cool whip. My daughter and I made a circle design.
This is all that was left just a couple of minutes later. 4 people (3 of them kids!) ate that much pie very quickly, and there were still a few people who had not had a slice. Have a HAPPY 4th!!!
