Pantry/Freezer challenge recipe #2

 I did make the Spaghetti Casserole   recipe last night and I was excited to see how much pantry/freezer items I actually got to use. 

For this recipe I used a jar of spaghetii sauce,  sour cream,  a can of tomatos, a can of cream of mushroom soup,  a box of spaghetti, a package of ground turkey and a bag of cheese.  

As always I did alter the recipe a teeny bit.  I used the ground turkey instead of ground beef,  because  that was what I had on hand.   I used canned tomatoes instead of the 2 cans of tomato sauce it called for, because I did not have any in the pantry.        One lesson  I did learn was TO READ the ENTIRE  recipe BEFORE starting to cook.   If I had,  I would have cut the recipe in half.  This recipe is huge and makes 2 full size 6 serving casseroles.    Oops,  oh well I had plenty left over to freeze. 

This is how I made it.  


Brown the meat (turkey or beef) in a skillet, once cooked add the jar of spaghetti sauce and the 2 cans of tomato sauce. 


Instead of the tomato sauce, I added a can of diced tomatoes.  When I make it again I think I will keep one can of tomatoes and add one cane of tomato sauce. Remove from heat.


When you are cooking the meat cook a box of spaghetti.  Once the spaghetti is done, drain and add in the sour cream and a can of cream of mushroom soup.  Mix well..   This is another step I changed because I did not fully read the recipe..   I was supposed to mix the soup and sour cream in another bowl to layer in the casserole, but it work out well this way anyway. 


Another change I made was to make two smaller casseroles in two 8 inch pans.  I only have one 8 inch pan and did not have room in my fridge or freezer for a second one.    I decided to make one ginormous casserole in one pan.


Bake at 350 degrees for 55-60 minutes.  Since I made one bigger casserole I went the ful 60 mins.    The cheese came out bubbling and perfect.


I cut the casserole into medium size pieces since they were so thick.  We had only about 1/3-1/2 of the casserole.  I cut up the rest of the pieces and put them in smaller containers in the freezer.   

Review..  My youngest daugther told me she didnt like it, she LOVED it.   My son refused to try it because he doesnt like spaghetti.  He doesnt know what he was missing.  Other than my son who could not give his opinion, it was a thumbs up.     I do agree it was really good and VERY filling.  It will fill you up fast.     I will make this again but next time cut the recipe in half.
