We always look forward to the day after Easter. The reason why.. Leftover Ham Casserole. It is a family favorite it our house, and it could be in your house too.
Preheat the oven to 425 degrees
Mix together in a casserole dish
2 cups uncooked rice
2 cups uncooked rice
1 can cream of mushroom soup
1/4 cup Miracle Whip
and 2 cups milk
Add about 6 ounces of cubed cooked ham
Add either frozen peas or broccoli (whichever you prefer) that have been thawed in the microwave
Cover with foil, and bake for 20 minutes
Uncover, add 2-3 handfuls of cheddar cheese and put back in the oven for 10 more minutes.
Enjoy and watch the casserole disappear!
